Monday: Stir Fried Tofu and Veggies with Spicy Korean Sesame Sauce
Tuesday: Chips with Salsa and Avocado (I know, it's lame, but I like it...)
Wednesday: Beef Stroganoff over egg noodles
Thursday: Probably eating out or take out since we have an afternoon of doctors appointments
Friday: Quiche - I'm thinking spinach, mushrooms, and cheese - with a salad
For the weekend, we are canning green and red tomato salsa. We'll see how it goes :)
